Tell the owner where Mumbai orders will go, what you cook and when deliveries leave. Dispatch access is part of the kitchen brief.
Map the menu to the kitchen
Identify prep, cooking, washing, storage and dispatch areas. Clarify which equipment belongs to the premises and who handles maintenance, hygiene arrangements and the approvals your business requires.
Compare the full tenure, included charges and exit arrangements as well as the headline price. Ask for the agreed specification and inclusions in writing. Availability and commercial terms come directly from the provider.
Separate the kitchen space from the kitchen service
Ask whether you get an exclusive kitchen, a shared production slot or an equipped operating unit. List menu processes, storage temperatures, equipment, preparation volume and dispatch timings. A kitchen for baking needs a different workflow from a high-volume delivery menu.
Inspect the production and dispatch chain
Discuss water, power, ventilation, extraction, drainage, cleaning, pest control, waste and rider pickup with the provider and appropriate specialists. Confirm which equipment and services are included and who handles breakdowns. Ask the relevant advisers about requirements for your actual food activity before starting operations.
Questions before you enquire
Does an equipped kitchen include every appliance?
Request a written equipment inventory, condition record and maintenance responsibilities for the exact unit.
Can I begin operating as soon as I rent it?
Do not assume so. The intended activity, premises and applicable approvals need their own checks with the relevant parties.
